There are so many ways you can celebrate with your mom this Sunday. I can think of a fantastic gift you can give your mom this year.

Surprise your mom and the rest of your family with a tasty and nourishing plant- powered dish. Serving a delicious and healthy plant-based meal is one of the best gifts you can give your mom.
When I was younger, I used to cook for my mom and aunts. They were always in the kitchen whipping up a fantastic meal for us. One year I enlisted with the help of my uncle. We decided to make breakfast for everyone. One of their favorite meals was Waffles. I remember that the smell would fill up the whole house. Creating food memories is a fantastic way to honor and remember your loved ones.

Mother's Day Recipe Round-Up
With the warmer days ahead of us, I love to start my mornings with something simple and nourishing. I love making this ultra-delicious and creamy plant-based smoothie. Give this Banana Beet Smoothie a try. Beets are in season and this sweet and cooling breakfast/ brunch choice is an excellent way to kick-start your morning. I will be making this recipe on Sunday.
I also included a fruity Vegan Ceviche recipe that is easy to make. It is perfect for spring and summer. This recipe is tangy, citrusy, and super fresh. This recipe will pair well with your favorite tortilla chips. You will keep this recipe in rotation all summer long.
Next up is a Budget Friendly Shepherd’s Pie. It is fun and easy to make. This is a dish your whole family will love. How about adding a Quiche to your menu this year? Guess What? This quiche has a surprise ingredient in the crust, sweet potato. This quiche recipe only has six ingredients.
Because it is spring, I wanted to include a fun, light, and Lemony White Bean Quinoa Salad. It is delicious and filling. This salad is worth trying.
This last savory dish is for family members who do not believe in the power of plants yet. It is for those who are still on the fence about whether or not a plant-based lifestyle is for them. This Salmon Salad will do the trick. It is fresh, tasty, and has lots of herbs. This salad also has a creamy-lemony dressing. To modify this recipe: use vegan mayo or vegan yogurt in place of regular mayo. They will be pleasantly surprised by the ingredients. Adding more plants to your lifestyle is a win-win. You will get your daily recommended dose of nutrients and minerals. Remember to add more plants to your daily meals.

Here Are Some Entertaining Tips
If you are entertaining over the weekend, I recommend keeping your meal plan simple, easy, and stress-free. Use bright spring colors to set your table.
To make your day less hectic, use ingredients that are easy to find. Also, if you are going to be a guest and you suffer from food allergies and have dietary restrictions, ask the host if you can bring a dish. This way you will have something to eat, and you will not have to worry about cross-contamination. You can focus on your loved ones and share your tasty dish.
Now For the Best Part of The Menu Sweets
Dessert was and always was my favorite part of celebrating Mother's Day. My Aunt made the best lemon pound cake. I have vivid memories of eating it and enjoying it with a cold glass of milk.
Full circle moment. Now I get to share my version of the same recipes that are now plant-based and gluten-free.
For Dessert, we are continuing with the theme of simple yet tasty.
