A few weeks ago, I was in a unique position. I had several bunches of bananas.
Like anyone who has a lot of bananas, I decided to make banana bread. But I was out of many of the necessary ingredients to make one. I had to improvise.

This week my Hubby tested the recipe himself. (He finally wants to learn how to cook and bake). He put his baking skills to the test and made this bread all by himself.
Banana Bread (SOS Free)
Ingredients
4 bananas (overripe)
2 Cups GF Oats
1/8 tsp of Nutmeg
1/2 cup Peanut Butter (No Salt)
1/2 cup of Coconut Milk
This time the texture was nice and smooth. He said that the texture was like the last one, but lighter, and the banana flavor more intense.
It was not as heavy as the last loaf and the flavor really popped the next day!
We will continue with a third round of recipe testing! Update coming soon!
Sometimes we must find joy in the ordinary, unglamorous and delicious chaos and confusion of cooking in the kitchen!
