Let me let you in on a little secret. I do not like bananas!
Funny, my whole life I could not stand eating them. To me they were just too mushy, and the smell is overpowering to me!
However, when I adopted a plant-based lifestyle, bananas and I became friends.
Still to this day, I do not eat them by themselves. I will only eat them in banana bread, or in smoothies.
I was asked me many years ago to make a banana bread. I accepted the challenge. I spent the next few months perfecting a recipe. When that recipe was perfected, I took some loafs and shared them with friends. My friends liked what they tasted. Not too long after I started to get special requests. I decided to start selling them along with my other baked goods. It became my best-selling quick bread loaf. Over the years, I have made many banana breads and I have perfected a few multi-ingredient, multi-step recipes.
Just last week my husband received a few bunches of bananas. I was talking to him about using some of them to make banana bread. We were out of a lot of ingredients. My husband told me to use what we had on hand. He told me to keep it basic. Minimal to no processed ingredients. No added sugar, or oil, or salt if possible. I accepted the challenge once more. We were out of baking soda, had no flour, and not enough sugar.
We had just the basic ingredients!
Bananas - 4
Peanut Butter (Salted) - 1⁄2 cup
Oats - 2 cups
Nutmeg - grated
I told him it would be good if we added fresh grated nutmeg. I used the blender to mix all the ingredients.
Poured it out into a baking pan and placed two halves of another banana on top and then sprinkled some oats, and then just baked it! Between 350 and 375 degrees for 45 minutes.
After it came out of the oven, I glazed the top of the loaf with some honey.
He loved it.
I didn’t like it.
He ate the whole loaf by himself in one day! The texture was little heavy, and that the texture was between that of a pone and a brownie.
We then both agreed to develop our own versions and share our findings with you. Stay tuned for the next chapter of this recipe-testing journey.
