I hope you had an awesome weekend, and that all is well with you and your family.
Life is short, so let’s eat cookies! This is the theme of today’s post. I have combined two well-known sayings and added my twist to it.
If you have a sweet tooth, like me, during the holiday season, you will want to eat some sweets, and if you love gingerbread cookies, you’re in luck. I make my own version of Ginger Oatmeal Cookies, but I wanted to try something different. I used wholesome ingredients to make these cookies vegan and gluten-free. I remember how much joy my aunt brought to us by buying Archway Gingerbread Cookies.
While trying to find the name of the company who made those yummy cookies, I stumbled across this fantastic iced gingerbread cookie recipe, which I modified to add my twist to this classic recipe, Iced Gingerbread Oatmeal Cookies is from Sally Baking Addiction by Sally McKenney. These cookies have the right amount of spice and are delicious.
Here’s what I did to make these cookies vegan and gluten-free:
Oatmeal (certified Gluten-Free Oats)
Molasses (Wholesome organic brand)
Spices (Ginger, Cinnamon, Cloves, Nutmeg, Allspice and Black Pepper. I added a pinch of the last two spices.)
Sugar (I used coconut sugar, but you can use brown sugar)
Vanilla Extract
Organic Powdered Sugar
Gluten-Free Flour Blend (King Arthur Flour Blend)
Flax Seed (to replace the egg. I used 1 tablespoon of ground flaxseed and 3 tablespoons of water, let it sit for about 5 min. until it gels)
Unsalted Vegan Butter
In this recipe, I added the oats in whole. I skipped steps 1 and 2 from the original recipe.

These Iced Gingerbread Oatmeal Cookies are such a special treat at the end of any celebration or gathering. They are packed with flavor, and the whole oats provide a dose of fiber, so you can eat them without feeling guilty afterwards.
