A Year in Review and Happy New Year

Hi friends,
Happy New Year!
In 2023 I started this newsletter on January 1st. I thought it was fitting to commemorate that occasion.
I had the opportunity to reflect on this past year. These past months, I have been working hard. My busy schedule hasn’t allowed me the time to be as active as I want to be.
When I started this newsletter in 2023, I was in transition. I was looking for a job. Like everyone else, I had to pivot, make adjustments, and slow down.
Let’s talk! I haven’t posted on my substack lately because I’ve been busy with classes doing lesson planning and developing recipes. I’m looking forward to having more time this year. I have so many recipes to share with you!!
With that being said: Developing recipes, writing worthwhile posts, and taking photographs takes work, time, and energy. With the rising food costs and AI. I’m looking forward to carving out more time in the new year to develop this newsletter.
I will announce some changes to the newsletter very soon. I came to substack to form more intermittent connections and form a community of like-minded people. With that being said, I have been plant based for nine years now.


My goal is to empower people to eat more plants, which is why I named this page joy of eating plants. I feel my best when I consume variety of plant based foods.
However, I occasionally encounter people who disengage when I post about cheese. Let’s clarify: I never claimed I don’t eat cheese!
I do enjoy goat and sheep milk cheese time to time.
That is my personal choice.
I’ve noticed that many bloggers and content creators change their perspectives based on their personal experience and often receive backlash from their former circles. Everyone has a story to tell; some stories may be longer than others, and some paths may be shorter.
Instead of focusing on why someone has changed their approach, let’s concentrate on the millions who haven’t yet tried a plant-based lifestyle!
Let’s continue to encourage and support each other on our journeys.
Whether it’s small step or a big leap, it’s all progress in the right direction.
We all deserve RESPECT!
As I’ve mentioned before, we are creating space filled with love and support.
